Lima Bean Stew

Quick and easy meal for dinner. Add some rolls or cornbread and a tossed salad and your done. Great recipe for mid-week. Hopefully you will have left overs for the next day. But not guaranteed😊



INGREDIENTS:

1 bag of frozen lima beans (14oz)

1 medium onion ( about 3/4 cup)

1/2 cup roasted red peppers

1 cup of kale

1 cup of shredded cabbage

1 cup celery chopped

4 cups chicken or vegetable broth

2 tablespoons of All Purpose flour

1 tsp fresh basil (1/2 tsp if dried)

1/2 tsp dried oregano 1 tsp fresh thyme ( 1/2 tsp if dried)

1/2 tsp fresh sage (1/2 tsp if dried)

1 tsp of salt

1 tsp of pepper

1 tablespoon crushed garlic (more if you like it)

1 cup of shredded chicken or

1 cup of veggie chicken olive oil

 

In a stew pot add 2 tablespoons of olive oil, cook onions, celery until soften, add garlic, and herbs and stir. Add flour and stir broth in slowly. Add cabbage, red peppers and kale, stir. Let the Stew come to a boil and then cover and let simmer for about 30 minutes. Add cooked protein ( shredded chicken breast, sausage or veggie meat substitute. Uncover and simmer for another 15-20 minutes.Top with smoked priprika and a drizzle of olive oil. Add salt and pepper to your taste
