Pineapple Coconut Cake with Cheese Cake Mousse

Pineapple Coconut Cake

This is an easy cake recipe. Use your favorite brand of yellow box cake mix. The picture shown is a pineapple coconut cake. The layers were made from two different recipes. Our scratch coconut cake recipe and this recipe for pineapple cake. Of course you can make it all pineapple or all coconut its up to your passion. INGREDIENTS for pineapple cake


 
1 box yellow cake mix
 
• 4 eggs
 
• ½ cup oil (I used grape seed oil or you can use melted butter)
 
• 1 (8 oz) саn crushed pineapple wіth juice



 
INSTRUCTIONS
 

  • Preheat oven to 350 degrees. Spray or parchment line two round 8" pans or 9x13 pan if you are making a sheet cake.

  • In a large bowl, combine cake mix, eggs, oil, and 1 can of crushed pineapple with the juice. Mix well.

  • Pour into prepared baking pan and bake for 25-30 minutes, or until toothpick inserted in center of cake comes out clean. Allow to cool completely on a wire rack.

You can make this cake in a 9x13 cake pan for a quick family dessert.
