Summer Fruit Cake

I used a box cake mix to simplify this recipe. You can also make from scratch using your favorite white cake recipe. This recipe will make a moist summer fruit cake. Light and refreshing. The frosting is made from whip cream so the cake will need to be refrigerated. I hope you enjoy and subscribe for more videos and recipes.

Ingredients

1 box white cake mix

3 egg whites

1 whole egg

1 cup buttermilk

1 tsp vanilla

1/4 cup grapeseed oil

2 tbsp Raspberry preserves

2 tbsp mango puree or preserve

2 tbsp lime lime juice

Tsp green, red and orange food coloring


Add cake mix to a bowl, mix eggs, oil, and buttermilk in a separate bowl. Add dry cake mix to your wet ingredients and mix until combined. Place in the oven and bake at 325 degrees for 20-15 minuets


Add the fruit and color to the batter.

You do not have to add the food coloring. It is added to bring out the colors but will be fine without it.


Separate into 3 bowls.

1: add strawberry preserve and red food coloring and stir

2: add mango puree and orange food coloring and stir

3: add lime juice and food coloring and stir


To Make frosting;

For the Study Whipped Cream:

  • 2 cups heavy cream, very cold

  • 1 cup powdered sugar

  • 1 teaspoon cream of tartar

  • 2 teaspoons vanilla extract

  • 8 ounces cream cheese, room temperature


  • To make the Sturdy Whipped Cream:

  1. in a mixer fitted with a paddle attachment, beat cream cheese until smooth, about 2 minutes. Remove cream cheese. Switch to a whisk attachment. In the now clean mixing bowl combine heavy cream, powdered sugar, cream of tartar, and vanilla, whipping until stiff peaks form. Add beaten cream cheese back into mixing bowl, whipping at a medium speed, until combined, about 1 to 2 minutes.

Lemon curd for filling

Lemon curd is also used in the filling. You can buy from the store or watch and get the video for my Smooth and Easy lemon curd.

 






To assemble the Summer Fruit Cake:

  1. Apply a bit of frosting onto a cake board. Place the raspberry cake onto the board and apply a thin layer of frosting, followed by a thin even layer of lemon curd. Repeat this process with the lime fruit layer, finally topping with the mango cake layer. Give a thin crumb coat of the frosting, chill for 15 -30 minutes, and then apply a thicker layer of the sturdy



whipped cream. Decorate the cake to your liking. In the video a kept it simple to leave room for the element of surprise when served. You can put into any flavor order. Just do it with passion.
