Delicious moist waffle carrot cake filled with cheesecake filling. An absolute must try. I usually make this cake in the spring. It's the perfect cake for easter brunch. But of course you can make this anytime and also serve as waffles in a plate topped with cheesecake mouse and a little melted white chocolate. Either way this will be a recipe you will enjoy over and over again.
CARROT CAKE (SCRATCH)
3 cups unbleached all-purpose flour
2 cups sugar
1 teaspoon salt
1 Tbsp baking soda
1 Tbsp cinnamon
1 1/2 cups olive oil or I used grapeseed oil
4 large eggs, lightly beaten
1 Tbsp vanilla extract
1 1/2 cups shelled walnuts, chopped (more whole or chopped for topping) OR PECANS
1 1/2 cups sweetened, shredded coconut
2 cups of finely we grated carrots
1 cup of drained crushed pineapple
1/2 cup of raisins or currants (optional)
Simple Steps to make the waffles
Sift dry ingredients into a bowl.
Add oil, eggs, to mixer and mix until blended
Add vanilla mix until blended
Add flour in 2 parts mixing in between.
Fold in carrots, pineapple, shredded coconut and chopped pecans or walnuts
Preheat your waffle maker
Add mix to your waffle maker and bake just as you would a regular waffle
Remove and cut edges if needed
Let waffles cool completely before stacking into a cake. You can make the waffles the day before and store in a ziplock bag in the refrigerator before assembling.
When you are ready to assemble place a waffle in a serving dish and top with cheesecake mouse filling. Add a waffle on top and continue to make until you have at least four waffles and filling ending with a waffle. Use the cheesecake filling to fill in the sides and use a cake spatula to smooth. You may continue decorate as desired but check out the video for illustration. I topped with cheesecake mousse, chopped pecans and sugar sprinkles.
Don't want to make from scratch? Use a carrot cake box mix. Although it will not be the same it will still be very tasty. Don't like carrot cake just use your favorite cake mix flavor instead.
1 carrot cake box mix
1/2 cup oil
1 cup milk
Mix using a mixer and continue using your waffle maker to bake
Serve with cheesecake mousse filling topped with pecans and melted white chocolate.
Make regular waffles and serve with cheesecake filling and melted white chocolate.

INGREDEINTS for the waffle cake filling
2 cup heavy cream
2 - 8 ounces cream cheese, room temperature
1 cup confectioners
1 teaspoon of vanilla
In a bowl mix the cream cheese until blended
add sugar and continue to blend. Hand mixer if fine to use for this recipe.
In a separate bowl mix the milk and vanilla together.
Slowly pour the milk mixture into the cream cheese mixture and mix until combined.
Scrap the bowl and mix on high for about 2-3 minutes. You are looking for a thick consistency.
Ready for your cake filling or pipe into a nice cup and top with fresh fruit.
