Zucchini Bread


What's all the hoopla about banana bread! Yes I love banana bread but I also love zucchini bread. Why? because its super moist, contains veggies (which I hear are good for you) and it taste good too. I hope you enjoy this recipe and find it enjoyable as many of my clients did in the past. I added of course a little passion and included my favorite spread for zucchini and banana bread.




INGREDIENTS

3 cups of flour

1tsp baking soda

1 tsp baking powder

1 tsp salt ( I use himaylian pink )

2 tsp cinnamon

1tsp nutmeg

1 tsp ginger ( if you don"t like ginger don't add it won't hurt the recipe. Just add 3 tsp of cinnamon instead of 2)

3 tsp vanilla

3 eggs

1 cup white sugar

1 cup brown sugar

1 cup of grape seed oil ( vegetable oil will work)

3 cups of shredded zucchini

1/2 cup crushed and drained pineapple

1 cup of chopped pecans or walnuts


Zucchini bread spread

4 ozs of cream cheese

1tsp of your favorite honey

 

INSTRUCTIONS:

You will need two regular size loaf pans or one large loaf pan. Preheat the oven to 325 degrees. Use your middle rack for baking.


Grate 3 cups of zucchini using a grater. Place the shredded zucchini into a cheese cloth. If you do not have a cheese cloth just use two sheets of paper towels. Place them together to make them strong enough to squeeze without breaking. Cover the zucchini, place in a bowl and set it aside. (Please see the video for illustration)


In a medium size bowl mix the flour, salt, baking powder, baking soda and spices together and set aside.


In a large bowl mix white sugar and oil together. Add brown sugar. Mixture will be grainy. Now add the eggs one at a time mixing after each addition. Mix well after adding final egg.


Add vanilla and mix. Add flour in thirds.( add flour, mix, add flour, mix etc.)


Add zucchini, pineapple and nuts. Fold together gently.(see video for illustration)

 

For the spread

Put soften cream cheese in a bowl. Add the honey. With a fork begin to mix together working from the sides to middle. Quick video here:
